Healthy Flaxseed Muffins for Kids (and Adults!)

Want to sneak some healthiness into your kids' diets? These flaxseed muffins passed the test of the world's pickiest ten-year-old. Cinnamon, coconut oil, and tons of eggs make these a sweet, earthy, gluten-free, and protein-packed treat.

Excuse the unprofessional photo, but I'm not a photographer. However, I'm a bit of a baker, and these are some of my absolute favorite muffins to make on a regular basis. My two girls constantly harass me for cake, cupcakes, and cookies—and I don't really blame them. That mess is delicious, and I really enjoy making all of it.
However, we need some healthy food up in this house with how ridiculously picky they both are (especially the old one). These muffins are the answers to my distressed, I-wish-cupcakes-were-healthy-too prayers.
Gluten-free, protein-packed, and quite reasonable in the sugar department. What more could you ask for?
Here's how to make them.
Cinnamon Flaxseed Muffins
Prep Time: ~10 minutes
Cook Time: 15 minutes
Approx. Servings: 12
What You'll Need:
muffin pan or silicone muffin molds
nonstick spray
a whisk (or hand mixer)
Ingredients:
2 cups of ground flaxseed
1/4 cup of mixed flax, hemp, and chia seeds (such as this mix)
3/4 cup of brown sugar (light or dark)
1/3 cup of coconut oil (liquid/melted)
1/3 cup of water
5 eggs (large)
1 heaping tablespoon of baking powder
a sprinkle of salt
2-3 tablespoons of vanilla extract (whatever floats your boat)
5 tablespoons of ground cinnamon
a few sprinkles of nutmeg
Directions:
Preheat your oven to 350°.
Put all of your dry ingredients into a medium-sized mixing bowl and whisk together.
Add in your wet ingredients and mix well until fully incorporated.
Spoon or pour your batter into 12 regular-sized muffin molds (whether using a metal pan or a silicone mold for these).
Place the muffins in the oven for 15 minutes.
Once they've finished cooking, allow them to cool.
Serve and enjoy!
Once you get used to the process, these are incredibly quick and easy to make, and they're a huge hit with kids and adults alike. No one in our household (besides me, obviously) even realized these were healthy until nearly all of them were gone.
